Ok, so my Sun Devils aren't in the PAC 12 championship. My tears have dried, my head is still held high, and I'll still cheer for them in whatever bowl game they end up.
We still have plenty of opportunities to tailgate with the Cardinals, so break out the Aussie grass-fed steak, put on your gear and make these AWESOME California Breakfast burritos for an early morning tailgate!
Aussie Tailgate Breakfast Burritos: California Style!
Prep Time: 15 minutes / Cook Time: 30 minutes / Servings: 4 burritos
Ingredients:
2 lbs. Open Nature NY Strip loin steaks
4 large, burrito size flour tortillas
1 cup Shredded Mexican cheese blend
1 cup pico de Gallo (recipe below)
1 cup fresh guacamole (recipe below)
1 bag of frozen steak fries
8 large eggs, beaten
2 tbsp. Olive oil
Non-stick cooking spray
Steps:
Preheat oven and prepare the steak fries according to package directions.
Heat a large skillet to high heat and spray with nonstick cooking spray. Add the beaten eggs and allow them to cook through, stirring occasionally. Remove from the heat and set aside until ready to use.
Rub the steaks with olive oil, salt and pepper to taste.
Heat a grill or grill pan to high heat. Grill the steak for 3-4 minutes on each side or until desired temperature is reached. Allow the steak to rest for a few minutes before slicing into thin strips.
Heat the tortillas for about 30 seconds in the microwave to warm them.
In the center of the tortilla, place a few strips of steak, a few of the steak fries, a large spoonful of scrambled eggs, 1/4 cup of shredded cheese, 1/4 cup of guacamole, and 1/4 cup of pico de Gallo. Tuck the sides of the tortilla in and roll the burrito up until closed. Serve immediately.
Pico de Gallo
Ingredients:
1 large tomato, chopped
1/4 red onion, chopped
2 tbsp, chopped fresh Cilantro
1 medium Jalapeño, seeded and chopped
Juice of 1 lime
1/4 tsp. Each salt/pepper
Steps:
Combine all ingredients in a mixing bowl until combined.
Guacamole
Ingredients:
4 large Avocados, peeled, seeded and chopped
2 cloves fresh Garlic, minced or pressed
Juice of 1 Lime
1/4 tsp. each salt/pepper
Steps:
Combine all ingredients in a mixing bowl and stir until avocados are smooth and creamy.
